To create the honey habanero cardamom simple syrup, you’ll need:


– 2 lbs. (900g) honey

– 2-4 Habanero peppers (tops cut off, halved, and deseeded), or similar chilli alternative, such as Scotch bonnet

– Cardamom powder (start with 1 teaspoon)

– 1 cup (250g) white sugar

– 1 cup (250ml) water


1. Combine honey, chilli peppers, cardamom, sugar, and water in a saucepan.

2. Bring the mixture to a gentle boil, ensuring it doesn’t spill over.

3. Immediately taste the mix to gauge the heat of the peppers; if the mixture tastes too hot, remove the peppers and simmer until the sugar dissolves.

4. Cool to room temperature and store in the refrigerator.

Now, to create the Rigby Rising Bite Cocktail itself, follow these simple steps:


– 1.5 ounces (45ml) of high-quality bourbon (preferably high-proof)

– 1 ounce (28ml) honey habanero simple syrup

– Meyer lemon slice (charred and dehydrated for added appeal)


1. Mix bourbon and honey habanero simple syrup.

2. Pour the mixture over an ice cube in your favourite glass.

3. Garnish with a slice of charred and dehydrated Meyer lemon.
